How to Reheat New York Pizza So It Is Crisp Again

By Manhattan NY Pizza Kitchen · October 13, 2026

Leftover New York pizza can taste almost fresh again. The goal is a crisp bottom and melted cheese at the same time, and a covered skillet does that best.

Best: the skillet method

  • Heat a dry nonstick or cast-iron skillet over medium heat.
  • Put the slice in and cook 2 to 3 minutes until the bottom is crisp.
  • Add a few drops of water to the pan, away from the slice, and cover with a lid for about 1 minute so the steam melts the cheese.

Oven or air fryer

  • Oven: preheat to 450 degrees F with a sheet pan inside, put the slices on the hot pan, and heat 5 to 8 minutes.
  • Air fryer: 350 degrees F for 3 to 4 minutes. Check early; thin slices go fast.
  • Microwave: avoid it if you can. It warms the cheese but makes the crust soft and chewy.

How long does leftover pizza keep?

Refrigerate leftovers within 2 hours and eat them within 3 to 4 days, following USDA leftovers guidance. Store slices in a sealed container or wrapped so they do not dry out.
