How a New York Pizzeria Makes Pizza in Fort Lauderdale

By Manhattan NY Pizza Kitchen · October 13, 2026

A New York slice is wide, thin and foldable, with a crisp-but-bendable crust, a bright tomato sauce and a layer of melted mozzarella. Here is what goes into that style, how our kitchen on Cordova Road approaches it, and where to go deeper on each part.

What makes a New York slice a New York slice

New York-style pizza is a large round pie, hand-stretched thin and cut into wide wedges you can fold down the middle. The crust has a little chew and a crisp bottom; the rim is modest, not puffy. Compared with Neapolitan pizza it is bigger, thinner in the middle, baked a little longer at a lower temperature, and sturdy enough to eat on the go.

On our menu the plain version is the Manhattan Classic: thin crust (NY style), mozzarella cheese and tomato sauce, in Medium 12-inch, Large 16-inch and XXX-Large sizes.

1. The dough

New York dough is usually made with high-protein bread or high-gluten flour, a moderate amount of water, salt, a little yeast, and often a touch of oil and sugar. A slow rest in the refrigerator builds flavor and makes it easier to stretch thin.

Our dough is made in New York and brought to Florida. The pizza is made in Fort Lauderdale. If you want to make the style at home, our dough guide has a full home recipe, and you can also buy dough balls from us.

2. The sauce

Classic New York pizza sauce is simple: tomatoes, salt and a few seasonings, spread thin so the oven does the cooking. Marinara is a different, cooked sauce; on our menu, homemade marinara goes on the parm heroes and pasta. The sauce guide explains the difference and has a five-minute home recipe.

3. The cheese

Our pizzas use mozzarella. For a classic New York pie that usually means low-moisture mozzarella, which melts evenly and browns in spots without flooding the crust. Fresh mozzarella has its own place, on our Margherita. The cheese guide covers which mozzarella to use and when.

4. The stretch and the bake

New York dough is opened by hand, pressing from the center out and leaving a thin rim, never flattened with a rolling pin, which squeezes out the gas that gives the crust its structure. It then bakes in a very hot oven until the bottom is crisp and spotted. At home, a pizza steel or stone heated in the hottest oven setting gets you closest.

Questions

Is New York style the same as thin crust?

It is thin in the middle, but it is not a cracker crust: a New York slice stays soft enough to fold, with a crisp bottom and a modest chewy rim.

Why is New York pizza foldable?

The crust is stretched thin and wide, and a well-rested, high-protein dough stays flexible after baking. Folding the slice lengthwise makes it stiff enough to eat with one hand.
